abstract The present invention relates to a method of making a powdered dairy product composition. The method can include adding an isolator and calcium to calcium to the milk composition to produce treated milk, and forming the processed milk into powdered milk. The present invention also relates to a powdered skim milk product. The product may comprise one or more milk proteins that have been enzymatically altered by chymosin, wherein the chymosin-converted protein is not coagulated. The article of manufacture may also include one or more quenching agents that combine with calcium ions in the powdered product.
