Compositions and methods include genetically coding and expressing novel delta-9 desaturase in plant cells. In some embodiments, a method of expressing a nucleic acid in a plant cell to utilize the activity of the delta-9 diacetylase enzyme such that the percentage composition of saturated fatty acids in the plant seed is reduced and there is a side-by-side increase in omega-7 fatty acids.
