titleOfInvention End caps for edible collagen casing and methods for obtaining them
abstract The present invention relates to an edible, tubular collagen membrane having a plug at either end. Such a stop may be used to strain the end of the casing in order to stop the filling lump at the beginning of the process of filling the sausage and to protect the first filled sausage from being destroyed for its further processing in such a process, It is formed by an element, such as an edible solid ring, which seals the exit of such an end. Such an edible cap element may be edible and is preferably characterized by a thermoplastic composition based on collagen or gelatin. The solid composition has a low melting temperature and becomes a tackifier in the fluid state on the surface of the collagen film containing a certain level of moisture. The strong cohesiveness of the material of the composition in the fluid state allows the adhesion of the material to be set very quickly with very narrow differences between its melting temperature and the solidification temperature. Such closure may occur before or after creasing of the collagen casing, and the present invention also provides a process for performing such closure by thermally adhering the closure element to the casing material.
