The present invention relates to a maltitol powder which does not form a solid lump in the course of distribution and preservation of crystalline maltitol powder and does not require pulverization or re-classification at the time of use, It is an object of the present invention to provide a crystalline maltitol powder which is easy to handle and which can be automatized such as transportation and is hardly cemented. The maltitol in crystalline or powder state is put into a lathe dryer, a tunnel type drier, a cylindrical container, etc., and air having a relative humidity of 5% at a temperature of 30 to 33 DEG C is introduced at a space velocity of 11 to 12 from one side And the operation of discharging the mixture to the other side is continued for 24 hours to obtain a crystalline maltitol powder which is difficult to be hardened (hardly cracked). Even in the case where the relative humidity is 45%, a crystalline maltitol powder which is hardly cured can be obtained by combining with the other conditions such as the appropriate space velocity of the air flow rate and the treatment duration time. |
