The maltitol in crystalline or powder state is put into a lathe dryer, a tunnel type drier, a cylindrical container, etc., and air having a relative humidity of 5% at a temperature of 30 to 33 DEG C is introduced at a space velocity of 11 to 12 from one side And the operation of discharging the mixture to the other side is continued for 24 hours to obtain a crystalline maltitol powder which is difficult to be hardened (hardly cracked).
