titleOfInvention manufacturing methods of a functional fermented soybean paste use larva powder
abstract The present invention relates to a method of making functional soybean paste using larva powder. Specifically, the method comprises: a first mixture production step in which a soybean paste chunk, which is fermented while being dried at room temperature for 40-60 days, is immersed and aged in salt water for 40-60 days to decompose bean components and produce soy sauce, and then the soybean paste chunk is supported by a strainer to drain the salt water and crushed to produce a first mixture; a second mixture production step in which 1 kg of larvae of Protaetia brevitarsis and mealworms, which have been starved for 2-3 days, are washed multiple times with running water and air-dried to remove water therefrom, sterilized at high temperature and high pressure, frozen at -80C for 24 hours or more, and dried in a freeze-drier for 48-60 hours, and when the weight of the dried larvae remains in the range of 120-170 grams, the larvae are ground using a grinder to produce a second powder mixture; and a first and second mixtures mixing and aging step in which 2-7 parts by weight of the second powder mixture produced in the second step is mixed and aged with respect to 100 parts by weight of the first mixture mixed in the first step.
