abstract The present invention relates to a perennial fermented beverage, and more particularly, to a method for fermenting fermented beverage by fermenting the perennial leaf into Bacillus subtilis, Lactobacillus frutarch and Saccharomyces cerevisiae. According to the present invention, it is possible to produce a fermented beverage which is effective for prevention and improvement of diabetes through fermentation of Quercus acutissima Leaf, and particularly excellent in blood glucose lowering effect.
