The present invention relates to a process for the preparation of a purified D-cytochrome solution by removing impurities from a D-psicose solution to obtain a purified D-psicose solution; Concentrating the purified D-cytochrome solution; Cooling the concentrated D-cycozu solution to 30 to 40 < 0 > C through a heat exchanger; Terminating the D-Psycose solution at 30 to 40 占 폚 to obtain a mask; To a process for preparing high purity D-Sikos crystals having a purity of 98% (w / w) or more and a particle size of MA 200 or more, comprising the step of crystallizing the crystals using the above-mentioned endocrine mask. By using the production method of the present invention, it is possible to produce D-Sycose crystals which are pure and suitable for industrial application through an economical crystallization process without using an organic solvent from D-Sicose solution. |
