abstract |
The present invention relates to a composition for ephemeralization of a non-phosphate hexose comprising D-tacaturonate epimerase which is a sugar epimerase derived from a thermophilic bacterium, and a process for producing a non-phosphate hexose epimer using the composition . The D-tacturonate epimerase according to the present invention effectively induces the epimerization reaction of the non-phosphate hexose and can easily obtain the epimer form of the non-phosphoric acid hexose, particularly the rare hexose saccharide.
