The present invention relates to the manufacture, storage and thawing of export-oriented frozen fresh kimchi, and more particularly, to control the size of Chinese cabbage, washing with low-salt brine, washing, low-temperature aging using deionized water and dehydration, A method for manufacturing and defrosting a freeze-dried kimchi which is capable of shortening the dripping phenomenon caused by defrosting of the frozen kimchi by rapid freezing, thereby maintaining the taste and texture and extending the storage period of the kimchi. |
