abstract The present invention relates to a method for manufacturing fast-fermented bean paste containing mulberry leaf powder, comprising: a steaming step of soaking washed beans in water and steaming the same; a fermentation step of fermenting the steamed beans through the steaming step; an additive mixing step of mixing an additive containing mulberry powder to a fermented product fermented through the fermentation step; and a grinding step of grinding the fermented product mixed with the additive through the additive mixing step. The fast-fermented bean paste containing mulberry powder manufactured by the steps shows excellent anticancer effects, has high content of nutrients such as mineral or the like, and controls smells peculiar to fast-fermented bean paste, thereby showing excellent marketability.
