abstract |
The present invention relates to a method for producing maltose by using an enzyme having an amino acid sequence of SEQ ID NO: 1 derived from a Lactobacillus plantarum subsp. Plantarum ST-III strain. Compared to a conventional process, a reaction can be performed even at 30C which is a low temperature, so energy can be saved. The enzyme (LBA) of the present invention is alpha amylase included in carbohydrate hydrolysis enzyme family (GH family, GH) 13, but the enzyme can directly produce maltose because the enzyme has similar properties to beta amylase which hydrolyzes a substrate in a maltose unit from a non-reducing terminal. |
