The present invention relates to a method for producing a fermented shiitake mushroom capable of improving liver functions. The fermented shiitake mushroom obtained by the production method according to the present invention reduces the concentration of alanine aminotransferase (ALT), aspartate aminotransferase (AST), or lactate dehydrogenase (LDH), and thus is capable of protecting liver cells and improving liver functions. In addition, it contains ergothioneine and beta-glucan in quantity, and thus synergy effects can be anticipated in terms of health functions. Healthful foods for liver function improvement that use the fermented shiitake mushroom obtained by the production method according to the present invention can be effectively used for liver function improvement and intake of ergothioneine and beta-glucan, which are elements beneficial to the human body. |
