abstract | The present invention relates to a method of manufacturing functional dietary fiber using an extract of Japanese apricot and Japanese apricot beverage using an extract of Japanese apricot manufactured thereby. According to the present invention, the method comprises: a Japanese apricot seed removing step (S100) of removing seeds from Japanese apricot to separate flesh; an enzyme decomposing step (S200) of using enzyme to decompose the separated flesh of Japanese apricot; an aging step (S300) of storing the enzyme-dissolved flesh of Japanese apricot to perform aging; a filtering step (S400) of using a filter to filter the aged flesh of Japanese apricot; a concentration step (S500) of vacuum-concentrating and sterilizing the filtered flesh of Japanese apricot to manufacture an extract of Japanese apricot; a starch syrup solution manufacturing step (S600) of manufacture a starch syrup solution containing dietary fiber mixed with the extract of Japanese apricot; and a Japanese apricot extract and starch syrup mixing step (S700) of mixing the filtered and concentrated extract of Japanese apricot, and the starch syrup solution to manufacture functional dietary fiber. According to the present invention, the extract of Japanese apricot is mixed with the starch syrup solution containing the dietary fiber, so the functional dietary fiber is manufactured. Thus, unique flavor of Japanese apricot is increased, and usage of excessive sugar or artificial sweetener is restricted, so health-directed Japanese apricot beverage can be provided, and palatability and nutrition provision can be enhanced. |
