abstract The present invention relates to a method for producing buckwheat noodles containing tofu. Tofu having plenty of protein is mixed with buckwheat of buckwheat noodles mainly made of carbohydrate, and thus a nutritional balance is ensured in the buckwheat noodles. Buckwheat noodles produced through the method of the present invention are produced by mixing buckwheat which is a main ingredient with flour, tofu, and milk, and thus carbohydrate of buckwheat and flour, protein of tofu, and minerals and vitamins of milk ensure a nutritional balance in noodles. Also, the mixed flour, tofu, and milk do not reduce the flavors of the buckwheat noodles, so consumers can enjoy buckwheat noodles having tastes and nutrition. Moreover, milk protein is coagulated while coming in contact with buckwheat, flour, and tofu, and particles thereof are bound. Accordingly, noodles produced by mixing the same are not easily cut off while being consumed.
