titleOfInvention Process for preparing dry noodle comprising rice powder
abstract The present invention relates to a method for manufacturing dry rice noodles using rice flour of Seagoami, Mimyeon, or Palbangmi (types of rice developed in Korea) included in rice of a high amylose rice variety, and to the dry rice noodles manufactured thereby. The method for manufacturing the dry rice noodles comprises a) a step of pulverizing rice varieties of Seagoami, Mimyeon, or Palbangmi and filtering the pulverized rice with a sieve of 100-200 meshes to obtain rice flour; and b) preparing dough including the rice flour and processing the dough. Through the method for manufacturing the dry rice noodles of the present invention, the dry rice noodles of excellent marketability can be manufactured to increase rice consumption and improve product quality of the dry rice noodles.
