abstract The present invention relates to a method of manufacturing decaffeinated green coffee bean having harmful component and caffeine component removed therefrom by using an oriental medicine preparation method, the method comprising: a step A of extracting a natural extract from medicinal herbs; a step B of immersing green coffee bean in the natural extract extracted through the step A, performing steaming for a predetermined time, and performing drying to prepare first green coffee bean; a step C of immersing the first green coffee bean prepared through the step B in purified water, performing steaming for a predetermined time, and performing drying to prepare second green coffee bean; a step D of quickly cooling steam generated during a process of performing steaming through the step C to extract a distilled solution; and a step E of immersing the second green coffee bean prepared through the step C in the distilled solution extracted through the step D for a predetermined time and performing drying. The medicinal herbs set forth herein are prepared by at least one or a combination of two or more selected from among Hovenia dulcis Thunb., Houttuynia cordata Thund., Saururus chinensis Baill., peony, Alnus japonica Steud., Schisandra chinensis Baill., and Morus alba L.
