abstract The present invention relates to a method for manufacturing edible sugar and minerals by using the heart of sunflower stalks as a main material, and more specifically, to a method for manufacturing edible sugar and minerals comprising the following steps: performing enzyme hydrolysis with respect to the heart of sunflower separated from sunflower stalks to manufacture diastatic material; separating, purifying and concentrating the diastatic material to manufacture the edible sugar; and separating, purifying and concentrating inorganic salt extracted from the heart of sunflower stalks to manufacture the edible minerals. According to the present invention, edible sugar and minerals manufactured thereby contain plenty of potassium, calcium and magnesium while not at all containing materials harmful to humans, animals and microorganisms, and thus may be used as healthcare food materials, and additives for feed manufacture and microorganism fermentation.
