abstract The present invention relates to a method for lowering beta-glucan of skim-mushroom using beta-glucanase derived from the F. vulnificus strain WRL301 strain, wherein an agar plate containing β- , 3-1,6 enzymes that hydrolyze glycosidic bonds or strains producing these enzymes were selectively screened and applied to skimmed mushroom polysaccharides to obtain low molecular weight polysaccharides.
