The present invention relates to a process for producing strawberry tofu and a strawberry tofu. The strawberry tofu according to the present invention is prepared by adding strawberry powder, bit powder, natural crystalline fructose, powdered vinegar, and coagulant to a soy milk solution. The strawberry tofu according to the present invention can add nutritional components of strawberry and has high antioxidant activity. In addition, strawberry tofu with reduced microbial count can be produced by bit powder, natural crystalline fructose, and powdered vinegar, and storage stability is also improved. |
