abstract The present invention relates to bread for protecting brain neuronal cells and a manufacturing method thereof and, more specifically, to bread for protecting brain neuronal cells which is capable of preventing and alleviating brain disease by inhibiting apoptosis of nerve cells by oxidative stress using a Cirsium setidens Nakai extract or an Aster scaber Thunb extract, and a manufacturing method thereof. The present invention has strong antioxidant activities, strongly removes reactive oxygen species (ROS) generated inside a cell when treating a human nerve mother cell with SK-N-SH under the oxidative stressed condition, and protects brain nerve cells by inhibiting apoptosis of nerve cells by oxidative stress.
