The present invention relates to a functional strain isolated from doenjang, a method for producing functional soybean paste using the same, and a functional soybean paste prepared by the method. More specifically, the present invention relates to a method for preparing a functional soybean paste using proteolytic activity, a thrombolytic activity, an antioxidative activity and an ACE inhibitory activity using the strain and a functional soybean paste prepared by the method. According to one embodiment of the present invention, a functional soybean paste can be prepared by using a functional strain isolated from native soybean paste, which has proteolytic activity, thrombolytic activity, antioxidative activity and ACE inhibitory activity. The odor component can be removed or reduced compared with the conventional doenjang, which can dramatically improve consumer preference. |
