The present invention relates to a sauce composition comprising a fruit concentrate for a functional noodle and a manufacturing method thereof and, more specifically, to a composition comprising: a mixed seasoning sauce composition for a noodle which makes a fruit concentrate, capsicum, sugars, pastes, spices, etc., in liquid form; and an anchovy powder sauce composition for a noodle which makes powder sauce as drying after extracting anchovy, kelp, mushroom, spices, etc. A mixed seasoning sauce comprising a fruit concentrate for a noodle has excellent antioxidant activity and inhibiting capability for excessive blood sugar after eating a noodle. |
