The invention D- sorbitol dehydrogenation enzyme (D-sorbitol dehydrogenase) oxydans (Gluconobacter oxydans) D- sorbitol dehydrogenation enzyme expressed from the gene of the novel D- sorbitol dehydrogenation enzyme derived from a strain having an activity, Sorbitol dehydrogenase from a strain transformed with a recombinant expression vector containing the gene, and a method for producing L-sorbose using the enzyme. The recombinant D-sorbitol dehydrogenase of the present invention specifically converts D-sorbitol and can stably catalyze the enzyme reaction. The D-sorbitol dehydrogenase derived from gluconobacter oxydans and the method for producing L-sorbose using the D-sorbitol dehydrogenase can be efficiently used for mass production of L-sorbose. |
