abstract The present invention relates to a sweetness and a color enhancing agent for fruits containing sucralose as an active ingredient, comprising phosphoric acid and calcium in a certain ratio. According to the present invention, the sugar content and coloring enhancer of fruit according to the present invention is characterized in that the ratio of phosphoric acid to calcium is 5 to 10%: 4 to 6% (w / w) It can be usefully used for improving the sugar content and coloring of fruits with low cost and high efficiency including sucralose, which is a high sweetener which is 600 times stronger than sugar and does not cause softening of fruit.
