abstract | The present invention relates to a method for producing salted dry fish from which fishy smells are removed, wherein by using a mixture in which turmeric and salt are diluted, fishy smells are removed from the fish, and the fish is dried at the same time. The method comprises the steps of: a) preparing fish by having internal organs removed through cutting the fish open in order to remove the internal organs therefrom and washing the same; b) preparing salting liquid by adding and diluting turmeric powder and salt in water; c) dipping and salting the fish having its internal organs removed in the step a) in the salting liquid of the step b); d) withdrawing the dipped fish of the step c) from the salting liquid and dehydrating the withdrawn fish so that the salting liquid does not flow down therefrom; e) producing the salted dry fish by semi-drying the dehydrated fish of the step d) in a drying chamber; and f) packing the semi-dried salted dry fish of the step e). |
