abstract | The present invention relates to a manufacturing method of a sugar-free ginseng rice cake, which comprises: a step of obtaining a mixture by mixing grain powder, ginseng enzyme hydrolysates, a binding agent, sugarless saccharides and salt; a step of obtaining a dough by adding purified water to the mixture and kneading; and a step of putting the dough in a steamer and steaming, and to a sugar-free ginseng rice cake manufactured thereby. The present invention provides ginseng rice cake, which includes saponin glycoside while masking the bitter taste of ginseng, has no concern of causing obesity or metabolic syndrome, and is beneficial to health by enabling an intake of ginseng components. |
