abstract | The present invention relates to a method for making ginseng sauce containing ginseng as a main ingredient. More specifically, the present invention provides a method for making a ginseng sauce containing ginseng as a main ingredient wherein the method comprises the steps of: steaming ginseng in boiled water, followed by pulverization, and then adding a degradation enzyme thereto to perform enzymatic degradation; boiling flesh or bones, vegetables, or spices in hot water to prepare stock; and mixing enzymatically degraded ginseng materials with the stock and minor ingredients to prepare a sauce. The ginseng sauce of the present invention suppresses bitter tastes contained in the ginseng through enzymatic degradation and allows the ingestion of saponin glycosides, thereby providing a healthful ginseng sauce. |
