abstract |
Combinations of EGCG and derivatives of basic amino acids have been found to be effective anti yeast agents in acidic foods. The present invention relates to a method for inhibiting or preventing the growth of yeast in acidic foods (i.e., foods having a pH of 2 to 6), which method comprises: a) epigallocatechin gallate (EGCG) as an anti yeast agent. And b) adding a derivative of basic amino acid and / or a salt thereof to the food. The invention further relates to a composition for addition to a food, and to an acidic food comprising the composition, said composition comprising a) epigallocatechin gallate b) with both lauric acid alginate and polylysine do. |
