abstract | The present invention relates to a yeast in which an ALD3 gene has been deleted and a method for producing 2-phenylethanol using the yeast, and preferably a method for producing 2-phenylethanol using S. cerevisiae in which an ALD3 gene has been deleted, wherein phenylalanine is contained in a medium as a sole nitrogen source To increase the production of 2-phenylethanol. In addition, ALD2 may also be mutated to produce a mutant strain, which can further increase its production efficiency and further increase the production of 2-phenylethanol by overexpressing the ALD80 gene or further including a plasmid containing the ARO9 or ARO10 gene .
