abstract | The present invention includes novel synthetic routes for the formation of lactylates. The method includes the step of reacting the dilactide with a compound comprising a hydroxy group. The reaction is preferably carried out in the presence of a cation or other alkaline source. Preferred compounds comprising hydroxy groups include any fatty acid and fatty alcohols (especially C 1 -C 26 fatty acid chains). Preferred cations include cations of Group I and Group II metals, with sodium, calcium, and potassium cations being particularly preferred. The reaction of the present invention proceeds much faster than the prior art lactylate synthesis reactions and can be used to form 1-, 2-, 3-, 4-, and 5-lactylate. |
