abstract |
The invention provides a ratio of whey protein to casein in the range of about 25:75 to less than about 50:50, total protein content of at least about 20% based on dry matter, and from about 2.5% to about 8% by weight of the product Whey protein product having a protein content of. The product has a good amino acid composition and is particularly suitable for athletes. The present invention also relates to a method for preparing whey protein products using microfiltration and ultrafiltration. The whey protein product consists of ultrafiltration residues and casein-containing materials with a total protein content of at least about 20% based on a ratio of whey protein to casein and less than about 20:80 to less than about 50:50 and dry matter. |
