abstract | The present invention relates to a red pepper concentrate manufacturing method, and more particularly, an extraction step of extracting red pepper grinding liquid by wet grinding red pepper, and a filtering step of filtering red pepper grinding liquid extracted in the extraction step to remove residues. Concentrating step of concentrating the red pepper crushing liquid is removed from the step, wherein in the extraction step, the hot pepper is pulverized by wet and the heat generated during the grinding process is cooled so that hot heat is not applied to the red pepper grinding liquid. It can be used to provide pepper concentrates with excellent color, flavor and nutritional value by containing a large amount of useful ingredients such as capsanthin, a spicy flavor, and vitamins A and C, which act as bioactive substances. It relates to a red pepper concentrate manufacturing method. |
