The present invention relates to a food comprising a high level of ethanol soluble fiber and total dietary fiber and a method of making the same. In particular, the food contains at least one food ingredient and modified high hydroxypropyl substituted starch. Modified starch is suitable as a non-animal derived gelatin substitute in foods traditionally made with gelatin and can also be used in extruded foods. |
