DISCLOSURE OF THE INVENTION Problems to be solved are to provide a butter cream having a good shape retention and a moist texture. Moreover, even if it uses palm oil fat, it is providing the butter cream which has applicability | paintability and has a moist texture. [Solution] A butter cream comprising 30 to 60 mass% of fats and oils, 0.2 to 2.4 mass% of starch, 20 to 46 mass% of sugars other than starch, and 10 to 30 mass% of water. This butter cream can be manufactured by mixing and stirring the oil-in-water emulsion containing starch to a plastic oil-fat composition, and adding and stirring an saccharide aqueous solution. |
