abstract The present invention relates to a patty composition comprising duck meat, a method for preparing patties, and a patty including duck meat, in a group consisting of donkey, cinnamon, Baeknyeong, peony and Schisandra chinensis per 100 parts by weight of raw meat consisting of duck meat and pork. 0.1 to 3 parts by weight of the selected one or more herbal medicines, and the total pork fat, which is the sum of the pork-derived fat and the separately added pork fat, is 0.5 to 2 parts by weight based on 100 parts by weight of the raw meat, and the content of saturated fatty acid is about 50 parts by weight. It is lowered to less than%, has no off-flavor, and is excellent in texture, flavor and overall preference.
