PURPOSE: A health functional food containing a processed plant extract in a Panax species as an active component is provided to protect the liver cell or the improvement or the prevention of liver diseases. CONSTITUTION: A health functional food for the protection of liver or the improvement and prevention of liver diseases contains a processed plant extract which increases a medicinal component in which the sum of ginsenoside Rg3, Rk1, Rg5 contents is higher than that of ginsenoside Rb1, Rb2, Rx, Rd contents. The Panax species plants are processed ginsengs in which the medicinal components are increased ratio of ginsenoside(Rg3+Rg5)/(Rc+Rd+Rb1+Rb2) heating ginsengs for 0.5 to 20 hours in a high temperature ranged from 120-180°C.
