abstract | PURPOSE: A manufacturing method of melon juice is provided to use freeze-dried melon powder in manufacturing melon juice. CONSTITUTION: A manufacturing method of melon juice comprises the following steps: manufacturing freeze-dried melon powder by removing placenta of melons and freeze-drying the result at -40 deg. C and 5mTorr for 72 hours; adding enzyme and water which is 10 times more than the freeze-dried melon powder in the freeze-dried melon powder then extracting an extract at 90 deg. C for 2 hours; extracting melon cellulose for 3 hours by cooling the extract from the previous step to 60 deg. C and adding a diastatic enzyme to the extract; concentrating the melon cellulose extract at 85 deg. C for 3 hours; and mixing the melon cellulose extract, liquid fructose, vitamin C, and purified water in a ratio of 1.50 : 14.00 : 0.06 : 84.4. |
