abstract The present invention relates to a method for enzymatic hydrolysis of collagen and protein containing raw materials. The raw material is enzymatically hydrolyzed to form three layers: an upper layer containing fat, an intermediate layer containing water soluble components, and an insoluble lower layer containing bone and insoluble protein. These layers are separated and the second layer is further separated, which is cooled for a time sufficient to form the following two layers: a lower layer containing partially or totally solidified collagen, and a liquid phase containing residual water soluble protein. Upper layer. The last layer is removed and the rest is heated until it becomes liquid. The hydrolysis tank 10 includes a rotary stirring mechanism and a device for heat exchange. The bottom of the tank is provided with a reversible screw. The clearing sump 15 for separating the collagen includes an inlet for the supply of hydrolyzate. A heat exchange system 17 comprising a heating jacket surrounds the sump.
