abstract | The present invention relates to a fermentation process, wherein a source of carbohydrates is contacted with microorganisms in an aqueous fermentation broth under fermentation conditions to form a fermentation product which is a salt or product whose boiling point is above the boiling point of water, the fermentation process being below atmospheric pressure, at least, The reaction medium is run at a pressure that is at its boiling point at the fermentation temperature and water is evaporated and removed from the reactor in an amount of at least 20% of the liquid volume present in the reactor at the start of fermentation during fermentation. Performing the fermentation process at reduced pressure while removing substantial amounts of water has been found to have numerous advantages. This solves the problem of having excess water in the system, which ensures the removal of the heat of reaction and can lead to improved fermentation quality. |
