The present invention relates to N-acyl-D-glucosamine 2-epimerase and a method for preparing mannose from glucose using the same, and more particularly. Preferably, the present invention relates to an N-acyl-di-glucosamine 2-epimerase and a gene encoding the enzyme and a recombinant expression vector containing the gene, a microorganism transformed therefrom, and a production method of obtaining mannose using the same. According to the present invention, unlike the production of mannose from fructose using conventional isomerase, it is possible to produce mannose directly from glucose, which is cheaper and easier to secure than fructose by using epimera. And it can be usefully used in the manufacture of functional foods and pharmaceuticals. |
