| abstract |
The present invention provides a stable dispersion of insoluble collagen through microfluidization processing. Dispersions of these insoluble collagen proteins are maintained in a stable suspended state with minimal or no precipitation or precipitation even under prolonged storage conditions. More specifically, the present invention provides a stable dispersion of insoluble collagen comprising collagen particles in which 50% by volume of the particles are less than 30 μm in diameter. Such dispersions are provided in water-soluble form to facilitate incorporation into foods and beverages and to facilitate administration to humans or mammals in need of collagen. |
