abstract | PURPOSE: A producing method of bean curd without using brine containing a fruit extract is provided to use a natural vegetable coagulant instead of a chemical coagulant. CONSTITUTION: A producing method of bean curd without using brine comprises the following steps: mixing 1L of juice obtained from lemon, orange, tangerine, trifoliate orange, or their mixture with 1-9L of pineapple juice to obtain a fruit extract; dipping soybeans in water for more than 16 hours, and grinding the soybeans to obtain a ground soybean product; adding water into the ground soybean product, and boiling for more than 2 minutes at 100 deg C; filtering the boiled ground soybean product for removing bean curd dregs, and obtaining soymilk; adding 10-50ml of fruit extract per 1L of soymilk at 75 deg C while stirring; and inserting the obtained coagulated mixture into a molding frame, and removing the moisture from the mixture. |
