abstract | PURPOSE: Seasoning sauce containing acai berries, and meat seasoned and aged by using thereof are provided to improve the quality and taste of the meat by using antioxidant components of antocyanine in the acai berries. CONSTITUTION: Seasoning sauce containing acai berries for seasoning meat is obtained by the following steps: boiling 15kg of water, 100-120g of sea tangle, and 1.8-2.5kg of radish; inserting 180-220g of dried bonito slices in the boiled mixture, and steeping for 15-20 minutes; and mixing 5-6kg of obtained dried bonito stock, 0.7-1.2kg of acai berries, 1.5-2kg of soy sauce, 1-1.5kg of sugar, 1.5-2kg of refined rice wine, 1.5-2wt% of cooking wine, 180-220g of garlic, 90-110g of ginger slices, 15-25g of black pepper powder, and 15-25g of sesame seed oil. |
