In the manufacturing method of edible oils and fats, 3-MCPD-FS (3-chloro-1,2-propandiol forming substances) is reduced by adding an adsorbent to the refined fats and oils which went through the deodorizing process, and then filtering. A method of preparing edible fats and fats, and 3-MCPD-FS prepared according to the above method provides reduced edible fats and fats. According to the present invention, it is possible to prepare edible oils with a significantly reduced content of 3-MCPD-FS compared to conventional edible oils, and edible oils with a significantly lower risk of genotoxicity and carcinogenicity, which have been a concern due to the presence of 3-MCPD-FS. It is preferred because it can provide fats and oils. |
