| abstract |
The present invention relates to a bakery product having a core and a shell wherein the bakery product contains 10 to 55% by weight of fructan and up to 70% by weight of sucrose and at least the shell is not fat-continuous. The shell corresponds to 10 to 90% by weight of the whole confectionery product. Bakery products preferably have a non-sucrose bulk sweetener, for example isomalt, as a main component. The invention further relates to a process for the manufacture of bakery products, in particular filled hard candy. |
