The present invention relates to a method for fractionating N- (p-Coumaroyl) serotonin and N-feruloylserotonin having high antioxidant properties in safflower seed. Specifically, (1) extracting safflower seeds with ethanol for 2 to 3 days without grinding, (2) ethanol extract was concentrated under reduced pressure, fractionated with chloroform to form N- (p-Coumaroyl) serotonin as a single Fractionating N- (p-Coumaroyl) serotonin and N-feruloylserotonin, comprising the steps of: fractionating with substance, (3) fractionating with chloroform and remaining water fraction with ethyl acetate to fractionate N-feruloylserotonin into a single substance.
