abstract | PURPOSE: Onion kimchi and a producing method thereof are provided to extend the fermentation time of onions compare to salted onions, by coating the onions. CONSTITUTION: A producing method of onion kimchi comprises the following: peeling the outmost skin of onions(S201); cutting the peeled onions(S202); dipping the cut onions in soy sauce for 30minutes~3hours(S203); washing the pickled onions with purified water(S204); spraying a fermentation inhibitor to the washed onions inside an airtight container(S205); inserting the coated onions inside a heat processing furnace at 70~95deg C, and drying(S206); adding seasonings to the dried onions(S207); and packing the seasoned onions(S208). |
