abstract The present invention provides a method for producing a medium seed having a high moisture retention ability at the time of heating after filling the cow and having an excellent texture, and a food comprising the cow prepared using the same. Specifically, it provides the medium for food containing a cow, which contains the heated core material and the water-soluble cellulose ether which can be gelled at the time of heating. In addition, there is provided a method for producing a middle species for food comprising cows, comprising at least a step of heating the core material and mixing the heated core material with the gelable water-soluble cellulose ether upon heating to obtain the medium species. In addition, there is provided a food comprising a medium containing at least a heated core material and a water-soluble cellulose ether gelable upon heating, and a cow obtained by heating, baking or frying the material to be filled with the medium.
