The pH is raised to about 9 while increasing the temperature to remove the bitter taste of olive juice. Under these conditions the bitter compound is hydrolyzed and the resulting juice has an increased hydroxytyrosol content and no bitter taste. Such extracts may be further processed or used as components of a nutritional composition or nutritional supplement. |
