abstract |
The present invention provides a stable fruit preparation comprising (1) a) 10 to 22% by weight of acacia gum relative to the total weight of fruit preparation and b) 0.5 to 3% by weight of insoluble cellulose fiber relative to the total weight of fruit preparation; Or (2) a) 2 to 6% by weight of acacia gum, preferably 4 to 6% by weight of acacia gum, relative to the total weight of fresh dairy products comprising fruits; And b) 0.1 to 1% by weight of insoluble cellulose fibers, preferably wheat fibers, relative to the total weight of fresh dairy products comprising fruits.
